Elderflower "Hyldeblomst" Cordial

About the Recipe

This flower cordial can last you a whole summer of delicious freshness, for drinks & cocktails & feeling Danish.

Ingredients

For about 4 liters of Cordial, you will need :

  • About 50 beautiful Elderflowers

  • 50g Citric Acid (if you don't have, try pressing some Lemons)

  • 4 Lemons

  • 2kg of Sugar - you can use both Brown or White sugar, or a blending

  • 2 liters of Water


Preparation

Step 1


This step is the most entertaining. You'll have to go around collect some beautiful Elderflowers. In Denmark they call them "Hyldeblomst", and they love this stuff. Sirup, soft drinks, cocktails, beers. They put it in everything.

You'll have to check the right season wherever you live, in Denmark, the best time to go foraging them is about June to mid-July. You should target the ones that are big and open, away from roads. And remember you need their pollen : don't shake them too much. You only need the flowers, so don't damage the whole tree either.


Step 2


Back to the Kitchen !

Start by making the Sirup, boiling the Water, adding slowly and stirring the Sugar until it is completely amalgamated.


Step 3


To prepare the Flowers, you'll now shake them above a large bowl, get the pollen out a bit. Take the Zest of the Lemons apart, you'll add them by themselves for extra taste. Then, cut the Lemons into slices, and put them into the bowl.

You can add the Citric Acid at this time too.


Step 4


Slowly pour the Sirup onto the Flowers & Lemons. Stir a little, then put a kitchen Cloth over it, and leave it to rest for some days.


Step 5


Everyday, you'll have to move the mixture a little bit to avoid rot and make sure the pollen is getting out.


Step 6


After about 4 days, the sirup should have taken the fresh taste of the Elderflower ! You can filter the mixture with a table Cloth, or any filter better suited for this task.


Step 7


Bottle it in recycled glass & offer it to your friends !

These bottles should be stored in the fridge to avoid fermentation.


We read that if you leave it to ferment, you can make homemade "champagne". Sounds marvelous, and we should probably try that too.
